摘要
本试验酶解草鱼鱼鳞胶原蛋白制备胶原蛋白肽,并以此为原料制备肽-钙螯合物,利用傅里叶红外光谱分析法、紫外光谱分析法和差示扫描量热分析法对所得胶原蛋白肽和肽-钙螯合物进行结构表征。
In this experiment,collagen peptide was prepared by enzymatic hydrolysis of grass carp scale collagen protein,and then used as raw material to prepare peptide-calcium chelate.The structure of collagen peptide and peptide-calcium chelate was characterized by Fourier transform infrared spectroscopy,ultraviolet spectroscopy and differential scanning calorimetry.
