摘要 食堂是高职院校日常教学、科研等活动开展的主要保障。从日常管理细节入手,分析我国高职院校食堂管理的现状和存在的问题,坚持以流程为主线,以安全、优质服务、精益管理为重点,把握关键环节,加强食堂制度建设、流程管理、食品营养、人员能力提升、监督考核管理,从而提升食堂的管理和服务质量。 The canteen is the main guarantee for the daily teaching,scientific research and other activities in higher vocational colleges.Through analyzing the current situation and exi sting problems of the canteen management in higher vocational colleges in China,starting from the details of daily management,we insist on the process as the main line.Focusing on safety,quality service,and lean management,we will grasp the key links and strengthen the construction of the canteen system,process management,food nutrition,personnel ability improvement,and supervision and assessment management,thus improving the management and service quality of the canteen.
