摘要 设计的主要内容是年产4000t中式肉制品的工厂设计。该设计秉承以人为本、安全第一、质量至上的设计理念,整个设计按照工艺要求展开。工厂的整体设计包括:厂址的确定、厂区车间平面规划、工艺流程、物料衡算、水电量衡算、设备选型和技术经济分析。其中,生产工艺的设计包括:广式腊肠的工艺设计、酱猪肉的工艺设计和猪肉干的工艺设计。在设备选型方面,尽量选用机械设备,为中式肉制品的流程化、单元操作化和标准化生产提供了良好的生产条件,进而使生产具备较高的机械自动化。 The main content of the design is the factory design of Chinese-style meat products with the annual output of 4000 tons.This design adheres to the design concept of people-oriented,safety first,quality first,and the whole design is carried out according to the process requirements.The overall design of the factory includes:the determination of the site,the plant workshop layout plan,process flow,material balance,water and electricity balance,equipment selection and technical and economic analysis.Among which,the design of the production process includes:the process design of Cantonese sausage,the process design of braised pork with soy sauce and the process design of dried pork.In terms of equipment selection,we should use mechanical equipment as much as possible,which have provided good production conditions for the process,unit operation and standardized production of Chinese-style meat products,so that the production has higher mechanical automation.
