摘要
食品安全问题涉及公众健康和生命,近年来食品安全问题日益凸显。文章从供应链网络视角,运用文献分析和理论推演的方法,从食品供应链网络特性、市场监管、网络信息等方面挖掘供应链网络中食品安全风险的影响因素,基于此,从原料供应商采购环节、食品加工商生产环节、食品分销商物流环节和食品零售商销售环节深入剖析了供应链网络中食品安全风险的形成机制,从而提出针对供应链网络视角下食品安全风险的管理对策。
Food safety issues involve public health and life,and food safety issues have become increasingly prominent in recent years.From the perspective of supply chain network,this paper uses literature analysis and theoretical deduction to explore the influencing factors of food safety risk in supply chain network from the aspects of food supply chain network characteristics,market supervision and network information.Based on this,the forming mechanism of food safety risk in the supply chain network is deeply analyzed from the raw material supplier procurement link,food processor production link,food distributor logistics link and food retailer sales link,and put forward the countermeasures of food safety risk management under the supply chain network.
