摘要
叶黄素是重要的类胡萝卜素之一,特征性地存在于人眼视网膜的黄斑区,可减轻氧化应激和蓝光等对视网膜造成的损伤。母乳中含有叶黄素,是母乳喂养儿叶黄素的主要来源。由于各种原因不能纯母乳喂养的婴幼儿则易缺乏叶黄素,其体内叶黄素的浓度低于母乳喂养儿,因此婴幼儿配方食品添加叶黄素可能是一个很好的选择。本文就叶黄素的结构性质、在母乳中的含量及其影响因素、代谢和生物利用率、主要生物学功能以及在婴幼儿配方食品中的应用现状进行综述。
Lutein,one of carotenoids,accumulated in the macular area of the eye specifically,can protect retina against oxidative and blue light damage.Lutein in human milk is the main source for breast-fed infants.Infants who consume formula have lower serum lutein concentrations than breast-fed infants and may have lutein deficiency.So formulas fortified with lutein maybe a good choice for them.In this review,the structures and properties,the concentration in human milk,the metabolism and bioavailability in human,biological functions and the application in infant formula of lutein are discussed.
