基于北部湾区域特色探索食品发酵工程的试验教学改革

摘要 通过对广西北部湾地区的果蔬产品及水产品加工业的调查研究,掌握北部湾发酵食品制造业的现状及企业对应用型人才的要求,我们积极探索食品发酵工程的实验教学改革,以学生就业为导向,以培养发酵食品企业需要的应用型技术人才为目标,力求大部分食品工程专业的毕业生能顺利就业,同时满足发酵食品企业对兼具理论知识和动手操作技能的发酵工程人才的需求。 Through the investigation and analysis of fruits and vegetables products and aquatic products processing industries in Beibu gulf regions of Guangxi province,we learn about the present situations of food fermentation industries in Beibu gulf and the demands of enterprises for practical applied talents,actively explore the experimental courses reforms of food fermentation engineering,take students'employment as the guide,train the applied technical talents needed by food fermentation enterprises,and achieve the smooth employment of students after graduation,at the same time,meet the needs of food fermentation enterprises for fermentation engineering talents with both theoretical knowledge and hands-on operation skills.
