不同来源的蛋白质饲料对鲜鸭蛋感官品质与食用品质的影响

Effects of different sources of protein feed on sensory quality and food quality of fresh duck eggs

目的探究不同来源的蛋白质伺料配比对鲜鸭蛋品质的影响。方法以玉米-豆粕日粮中添加不同配比的菜粕、棉粕、皮革粉为不同蛋内来源饲料,按不同配比分成10组,分别为全豆粕组(对照组),12%菜粕和8%棉粕组,16%菜粕和8%棉粕组,20%菜粕和8%棉粕组,12%棉粕和8%菜粕组,16%棉粕和8%菜粕组,20%棉粕和8%菜粕组,8%菜粕和8%棉粕组,3.5%皮革粉组,7%皮革粉组,测定各组鲜鸭蛋的蛋重、蛋黄比例、蛋黄颜色、蛋形指数、哈夫单位,以及水分含量、蛋内质含量及质构特性。结果不同添加比例的棉粕、菜粕、皮革粉对鲜蛋蛋黄比例和蛋黄颜色均有显著性影响(P<〇.〇5),对鲜蛋蛋清弹性也有显著性影响(P<0.05>;随着菜粕添加比例的增加,蛋重呈下降趋势,蛋黄比例呈上升趋势,以12%的比例添加菜粕蛋黄色度最高。棉粕组蛋重、蛋黄色度明显下降,蛋黄比例略微升高;皮革粉组蛋黄色泽最差;棉粕添加会使鲜蛋弹性明显增加。结论棉粕、菜粕、皮革粉喂养蛋鸭会显著影响鸭蛋品质。菜粕的添加量以不高于12%为宜,棉粕的添加量以不高于8%为宜,皮革粉不适用于蛋鸭的喂养。

Objective To explore the effect ofdifferent sources of protein feedratio on the quality of fresh duck eggs.Methods Different ratios of rapeseed meal, cotton aphid and leather powder were added to com-soybean meal diets,which were divided into 10 groups according to different ratios, namely whole soybean meal group, 1 2 % rapeseed meal and8 % cotton pulp, 1 6 % rapeseed meal and 8 % cotton pulp, 2 0 % rapeseed meal and 8 % cotton pulp, 1 2 % cotton pulp and 8 %rapeseed meal, 1 6 % cotton pulp and 8 % rapeseed meal group, 2 0 % cotton pulp and 8 % rapeseed meal group, 8 % rapeseed meal and 8 % cotton pulp group, 3.5% leather powder group, 7 % leather powder group, the egg weight, egg yolk ratio, eggyolk color, egg shape index, Haugh unit, moisture content,protein content and texture characteristics of each group of freshduck eggs were determined. Results Different proportions of cotton aphid, rapeseed meal and leather powder hadsignificant effects on fresh egg yolk ratio and egg yolk color (P<0.05), and also had significant effects on the elasticity offresh egg whites (P<0.05). With the increase of the proportion of rapeseed meal, the egg weight showed a downward trend,and the proportion of egg yolk increased. Adding 1 2 % of the rapeseed meal group has the highest chroma. The egg weightand egg yellow color of the cotton aphid group decreased significantly, the proportion of egg yolk increased slightly, and theaddition of cotton aphid significantly increased the elasticity of fresh eggs. The egg yellow color of the leather powdergroup was the worst. Conclusion Feeding ducks with cotton aphid, rapeseed meal and leather powder can significantlyaffect the quality of duck eggs. The amount of rapeseed meal should not be higher than 12%, and the amount of cotton pulpshould not exceed 8%, and the leather powder is not suitable for feeding ducks.
