进口烟叶商品等级感官质量特征分析 被引量:2

摘要 为全面了解进口烟叶商品等级的风格品质状况,提升进口烟叶商品等级的品牌适配度,采用改良的《中式卷烟原料感官风格品质特色评价方法》对2015—2017年采购的津巴布韦等6个国家的137个批次商品等级烟叶进行了感官风格和品质评价。结果表明:(1)除马拉维烟叶主香韵为干草香外,其余进口烟叶主香韵均为干草香、焦甜香、焦香及木香等;(2)各区域典型样品主香韵表达存在差异:津巴布韦、巴西、赞比亚烟叶主香韵为干草香、焦甜香和焦香;美国、坦桑尼亚烟叶主香韵为焦香和干草香;马拉维烟叶主香韵为干草香。(3)同区域不同商品等级烟叶香韵轮廓和香气质、香气量、余味、浓度等变幅较大,能明显分为多个感官质量类别。结论:进口烟叶主香韵表达整体符合浓香类烟叶的香韵特点,但马拉维烟叶浓香特征不明显;不同国别典型样品香韵轮廓存在差异,按照典型样品香韵特点可以将进口烟叶划分为津-巴-赞焦甜焦香型(Ⅰ型)、美国-坦桑尼亚焦香干草香型(Ⅱ型)、马拉维干草香型(Ⅲ型)等3个香型。鉴于进口烟叶商品等级风格强度及感官品质变幅较大,国内企业须结合品牌用料目标需求进行模块功能规划和参与模块配方设计,才能进一步提升进口烟叶商品等级的品牌适配度。 In order to fully recognize the sensory quality,flavor style and quality grade of imported tobacco products,137 batches of commercial grade tobacco leaves imported during 2015-2017 from Zimbabwe,etc.six countries were evaluated by using the improved"Evaluation Method of Sensory Style and Quality Characteristics of Chinese Cigarette Raw Materials".Results showed that:(1)The main aromas of imported tobacco leaves were hay,caramel,burnt and woody flavors except Malawi tobacco leaves presented only hay odour.(2)There were significant differences in aroma notes among typical tobacco samples from various countries;hay,caramel and burnt flavors were found from Zimbabwe(abbreviated as letter Z),Brazil(B)and Zambia(Za),hay and burnt flavors from America(A)and Tanzania(T),hay flavor was from Malawi(M).(3)The same country's tobacco leaves of different commodity grades had a wide divergence in flavor profiles,aroma quality,aroma quantity,aroma intensity and aftertaste,which can be classified into multiple quality categories.In conclusion,flavor notes of the imported tobacco leaves from five countries were defined as strong flavor type except Malawi tobacco leaf flavor was mild;the flavor profiles of typical samples from six countries can be divided into three types:Z-B-Za caramel/burnt flavor type(Type I),A-T burnt/hay flavor type(TypeⅡ),M hay flavor type(TypeⅢ).Imported tobacco leaves are very different in quality grade,flavor and sensory quality,domestic users need to combine the target requirements of brand materials to carry out function standard planning and participate formulation standard designing for the further enhancement of brand adaptability of imported tobacco leaf grades.
