摘要
餐饮产业竞争力评价体系是研究餐饮产业竞争力提升路径的重要内容。借鉴相关研究成果,山西餐饮产业竞争力评价体系构建包括规模扩张能力、盈利能力、品牌塑造能力、可持续发展能力四个方面。通过对山西与全国26个省市的餐饮产业竞争力的强弱和类型比较,得到山西餐饮产业竞争力的得分、位序和类型,提出了山西餐饮产业竞争力提升路径:发挥企业家作用、主动融入资本市场;科技创新驱动、产业纵向发展;与旅游业融合、以城市集聚发展;把握消费趋势、满足市场需求;捕捉市场机会和产业政策扶持。
The competitiveness evaluation system of catering industry is an important part of studying its improvement path.According to relevant research results,the competitiveness evaluation system of Shanxi catering industry consists of four elements:scale expansion,profitability,brand shaping and sustainable development.By comparing the strengths and types of Shanxi with 26 provinces in China,we obtain the scores,the order and type of competitiveness of catering industry of Shanxi and suggest promotion paths including the role of entrepreneurs and active integrating into capital market,technological innovation drive and vertical development of the industry,integration with tourism and urban agglomeration development,grasping consumption trends and meeting market demand,capturing market opportunities and industrial policy support.
