新时期美食纪录片传播对中华饮食文化的历史传承与交流具有重要作用。以系列美食纪录片《舌尖上的中国》为分析文本,运用传播学视角,从寻找消失的记忆,记录舌尖文明;传播历史文化,塑造国家形象;和谐共生,传播中华精神等三个方面阐述美食纪录片与中华饮食文化的传承与交流。记录和呈现中华饮食文化精粹,能够提高中国饮食文化在国际上的影响力,塑造一个开放、绿色发展的东方大国形象,并让全球受众了解中华饮食文化的博大内涵。

The spread of food documentary in the new era plays an important role in the historical inheritanceand communication of Chinese food culture. The delicacy documentary " A Bite of China " was used as the analysistext to explore the relationship between delicacy documentaries and dietetic culture from three aspects:searching for the lost memories and recording food culture, disseminating history and culture values and shapingnational image, building a harmonious relationship between human and nature, and disseminating Chinesecultural spirits. Recording and presenting the development of Chinese dietetic culture could enhance theinternational influence of Chinese dietetic culture, create an open and green development of the great power ofthe world for the global audience, and make the global audience understand the broad connotation of Chinesedietetic culture.
