摘要
以雪梨瓜为原材料,经采摘、选果、清洗、切分、护色、干燥、回软、包装等步骤制作果干。对雪梨瓜不同采收期的产品获得率不同进行初步研究。结果表明,在相同能耗下,成熟度80%的雪梨瓜果干产品获得率最高,产品口感佳、色泽黄色、香味浓郁。
Taking snow pear melon as raw material,the processing steps begin with the harvesting of the fruit,followed by a series of picking,cleaning,segmenting,color-preservation,drying,post-baking,softening and packing steps.A preliminary study on different harvesting time had different production yield.It showed that snow pear melon picking at 80%maturity had the advantages of high yield,good taste,bright color and rich flavour.
