南疆水晶蜜瓜采后干制技术研究 被引量:1

摘要 研究不同处理方式对南疆水晶蜜瓜热风干燥效果的影响。以南疆水晶蜜瓜为试材,采用不同可溶性固形物含量,前处理、预处理后进行热风干燥,测定失重率、含水率、色差等指标变化。结合果蔬的加工特性,采用不同的处理方式,经热风干燥后,分析果蔬的失重率、最终含水率、总色差值在烘干期内变化的不同。结果表明,可溶性固形物对热风烘干制品的品质影响较大,可溶性固形物含量11%的水晶蜜瓜,烘干过程中,瓜干失重率、含水率变化略慢,较好地保持瓜干的品质。 The effects of different treatment methods on the hot air drying effect of Nanjiang crystal honeydew melon were studied.The crystal honeydew melon in southern Xinjiang was used as the test material,and the content of different soluble solids was used.After pretreatment and pretreatment,hot air drying was carried out to measure the weight loss rate,water content and color difference.Combined with the processing characteristics of fruits and vegetables,the results of comprehensive analysis,different treatment methods,after the hot air drying,the weight loss rate,final moisture content and total color difference of fruits and vegetables change differently during the drying period.The soluble solids have a great influence on the quality of hot air drying and drying.The crystal honeydew melon with 11%soluble solid content has a slightly slower weight loss rate and water content during the drying process,and better maintains the quality of dried melon.
