The Contrast of the Stability of Lutein and Lutein Ester

摘要 对比研究光照、氧气、温度对叶黄素和叶黄素酯稳定性的影响,并研究探讨加速和长期试验条件下两者的变化。研究发现,叶黄素酯对于光、氧的稳定性强于叶黄素,对于高温(70℃)的稳定性弱于叶黄素。加速试验和长期试验中,两者稳定性良好。结果表明,叶黄素与叶黄素酯在避光、隔氧、低温的条件下可以明显减缓其含量损失,在此条件下,叶黄素酯的稳定性强于叶黄素晶体。在生产储藏和运输过程中,两者都需要低温隔氧避光保存。 The effects of light,oxygen and temperature on the stability of lutein and lutein esters were compared,and the changes of the both under accelerated and long-term test condition were studied.It was found that the stability of lutein esters under light and oxygen was better than that of lutein,and the stability of lutein esters was worse than lutein at high temperature(70℃).In the accelerated test and the long-term test,lutein and its ester were stable.The results indicated that the loss of content of lutein and lutein ester could be obviously reduced under the condition of light avoidance,oxygen isolation and low temperature.Under this condition,lutein ester was more stable than lutein.In the process of production,storage and transportation,both of them needed to be stored in this condition.
