摘要
本文系统而简要地论述了膳食纤维的研究现状,包括膳食纤维的生理功能、提取方式、人体摄入情况以及在食品中的应用现状,并对其发展前景进行了展望,以期为膳食纤维的深入研究提供一定的理论基础。
The research situation of dietary fiber is introduced briefly and systematically,involving the physiological function,extraction methods,human intake,and applications in food industry.The development of dietary fiber is also prospected in order to provide a certain theoretical basis for the in-depth study of dietary fiber.
