摘要
在收储过程中,稻谷品质和营养价值的变化是稻谷-环境生态系统复杂相互作用的结果。本文在充分总结稻谷物理化学特性的基础上,寻找稻谷在收获、干燥和储存过程品质控制关键点,梳理稻谷物理化学特性的变化规律以及与环境变量和生物变量之间的联系,多方面总结维持稻谷品质、防止劣变的研究成果。在此基础上,将稻谷的品质属性综合统一,总结可用于预测稻谷品质变化趋势的模型,通过定性推理的方式,构建基于稻谷-环境生态的相互作用的系统模型,为稻谷收储管理提供帮助。
Changes in rice quality and nutrient value during harvesting,processing and storing are the result of interactions within a complex paddy-environmental ecosystem.On the basis of summarizing the physicochemical characteristics of paddy and rice,this review identified the key points and the trends of paddy quality control in harvest,drying,and storage,and the relationships between them with environmental variables and biotic variables.Research results of various aspects for maintaining paddy quality and preventing rice deterioration are summarized.For the contribution of storage management,based on the previous summary,this review integrated the quality attributes of paddy,summarized models that can be used to predict trends in rice quality and built up a paddy-environmental ecosystem from a qualitative reasoning process.
