摘要
以西州密17号哈密瓜为试材,为探究适宜哈密瓜采后贮藏的环境的相对湿度条件,分别用3种不同的相对湿度[(50±5)%、(70±5)%、(90±5)%]对哈密瓜进行处理,测定哈密瓜的呼吸强度、可溶性固形物的含量、可滴定酸的含量、维生素C的含量以及过氧化物酶(peroxidase,POD)的活性、多酚氧化酶(polyphenol oxidase,PPO)活性。对比(50±5)%、(70±5)%、(90±5)%3种相对湿度处理方式,(70±5)%的相对湿度处理下哈密瓜的呼吸强度最弱为3.29 mg/(kg·h),可溶性固形物含量上升2.9%,可滴定酸(titratable acid,TA)含量下降了0.03%,维生素C(vitamin C,VC)含量损失27.08 mg/100 g,POD活性变化最小,PPO活性相对较低。因此,(70±5)%的相对湿度处理更有利于西州密17号哈密瓜的贮藏保鲜。
In order to explore the relative humidity conditions suitable for post-harvest storage of cantaloupe,cantaloupe ‘Xizhoumi 17’was used as the test material,and the cantaloupe was treated with three different relative humidity [(50±5)%,(70±5)%,(90±5)%]. Respiratory intensity,soluble solids content,titratable acid content,vitamin C content,activity of peroxidase(POD)and polyphenol oxidase(PPO)activity were measured in cantaloupe. Compared with the 3 relative humidity treatment methods of(50±5)%,(70±5)% and(90±5)%,the respiratory intensity of cantaloupe was the weakest at 3.29 mg/(kg·h),the soluble solid content increased by 2.9 %,the content of titratable acid(TA)decreased by 0.03 %,the vitamin C content lost by27.08 mg/100 g,the POD changed the least,and PPO activity was relatively low. Therefore,the relative humidity treatment of(70±5)% was more conducive to the storage and preservation of‘Xizhoumi 17’cantaloupe.
