气-质联用技术在食品农药残留检验中的应用 被引量:3

摘要 随着社会的发展,人们生活质量要求的提高,食品安全问题中普遍关心的是食品农药残留问题。食品中农药的残留会给人们的身体健康带来了一定程度的危害,严重时危及生命。因此,建立方便、快速、准确的检测方法,已成为检验技术的关注点。气-质联用仪是利用气相色谱对混合物的高效分离能力和质谱对纯物质的准确鉴定能力而开发的分析仪器,气-质联用技术可以对食品中农药残留进行高效率的分离,既可以定性分析,又可以同时定量分析,在食品样品农药残留的质量监测和安全控制方面具有很重要的作用。本文从气-质联用技术在蔬菜水果、粮谷、肉制品、茶叶、中药材食品中农药残留检测的应用进行探讨。 With the development of society and the improvement of people’s life quality requirements, the problem of pesticide residues in food is generally concerned about in food safety. Pesticide residues in food will bring a certain degree of danger to people’s health, even if it is serious, it will endanger life. Therefore,it has become the focus of inspection technology to establish a convenient, fast and accurate detection method. GC-MS is an analytical instrument developed by using the high-efficiency separation ability of gas chromatography and the accurate identification ability of mass spectrometry for pure substances. GC-MS can separate pesticide residues in food efficiently, which can be used for qualitative analysis and quantitative analysis at the same time. It is very important in the quality monitoring and safety control of pesticide residues in food samples. In this paper, the application of GC-MS in the detection of pesticide residues in vegetables, fruits, grains, meat products, tea and Chinese medicinal materials was discussed.
