摘要
后肉样的颜色值、挥发性基氮值、pH、感官评价、菌落总数的变化,确定对冷藏猪肉保鲜作用最佳的连翘叶采收期。结果表明:对照组在6 d左右出现了腐败变质,与对照组相比,各实验组均能明显降低肉样的pH值、菌落总数和挥发性基氮值,其中8月份连翘叶提取物的保鲜作用最为明显,可相对延长肉样货架期3~4 d。
In order to determine the optimum harvest time of Forsythia leaves,the fresh-keeping effect of Forsythia leaves extract from different harvesting periods on chilled pork were evaluated by monitoring the color parameter,TVB-N value,pH,sensory quality,the changes of total bacterial number during the storage period.The results show that:corruption and deterioration occurred in the control group about 6 days,compared with the control group,all experimental groups can inhibit the rising of TVB-N,the total number of colonies and pH value,and maintain the texture quality and color,and besides,the preservation effect of Forsythia leaves extract in August was the most obvious,the shelf life of meat samples can be prolonged by 3~4 days.
