摘要
本文研究了γ-聚谷氨酸(PGA)对不同微生物的抑制性,及其与淀粉(St)复合涂膜对樱桃的保鲜效果。结果表明:PGA对大肠杆菌、枯草芽孢杆菌和酵母菌的最低抑菌浓度分别为2.5~5、2.5、和55 mg·mL^-1;比较PGA/St复合涂膜樱桃7 d后的保鲜效果,当PGA∶St为1∶2时,感官评价、失重率、总酸含量和维生素C含量最佳,分别为6分、6.73%、8.3 g·kg^-1和53.37μg·g^-1,结果表明具有应用价值。
In this paper,the antimicrobial effect ofγ-polyglutamic acid(PGA)on different microorganisms and its preservation effect with starch(St)composite coating on cherry were investigated.The results showed that the minimum inhibitory concentrations(MIC)of PGA on Escherichia coli,Bacillus subtilis and Yeast were 2.5~5、2.5 mg·mL^-1and 55 mg·mL^-1,respectively.Compared to the preservation of composite and control films,sensory evaluation,weight loss rate,total acid content and vitamin C content were the best when the quality ratio of PGA∶St was 1∶2,which were 6 score,6.73%,8.3 g·kg^-1 and 53.37μm·g^-1,respectively.The results showed that PGA/St film had application value.
