摘要
食品工业中常利用微胶囊技术保护活性物质免受外界不利环境影响,从而提高活性物质的稳定性及拓宽其应用范围。多糖及其衍生物具有价格低廉、溶解性好和生物相容性好等优势,常被开发为食品微胶囊壁材。本文在对食品工业中常见的多糖及其衍生物类微胶囊壁材进行综述的基础上,同时介绍了其在食品领域中的应用,并展望了其研究趋势,以期为这一领域的相关研究提供参考。
Microencapsulation technology was usually used in food industry to protect active substances from the adverse environmentimpacts,so as to improve the stability and broaden the application of active substances.Because the polysaccharides and their derivatives have many advantages such as low price,good solubility and good biocompatibility,they are often developed as food microcapsules wall materials.In this paper,the common microcapsules wall materials of polysaccharides and its derivatives in food industry were reviewed.What’s more,their applications in food industry were introduced,and the research trends were prospected.The aim of this review is to provide some references for the researches of food microcapsule wall materials.
