摘要 近几十年,辛烯基琥珀酸淀粉钠(OSA淀粉)作为食品添加剂在工业生产中广泛应用。新方法(合成和表征方法)和新应用的出现,人们对OSA淀粉及相关产品越来越关注。OSA淀粉是由淀粉羟基与辛烯基琥珀酸酐酯化反应得到,最常见的合成方法是辛烯基琥珀酸酐(OSA)和淀粉在温和的碱性条件下反应。该条件有助于减少淀粉分子链之间的氢键,从而有利于淀粉颗粒的膨胀以及OSA分子在膨胀的淀粉颗粒内扩散。研究人员不停探索新的合成条件和合成方法,减少OSA淀粉改性时间,提高OSA改性淀粉反应效率。通过核磁共振(NMR)、傅里叶变换红外光谱(FTIR)、体积排除色谱(SEC)和非对称流场-场分馏(AF4)表征OSA淀粉的结构。本文综述了辛烯基琥珀酸淀粉钠的合成方法和结构表征方法。 Starches modified with octenyl succinic anhydride(OSA)have been used in a range of industrial applications,particularly as a food additive,for more than half a century.Interest in these products has grown in recent years as a result of new methods(synthesis and characterization methods)and applications becoming available.OSA starch is obtained by esterification of starch hydroxyl with octenyl succinic anhydride,the most widely described synthesis pathway is a reaction in aqueous medium under mild alkaline conditions with the starch in its granular form,slightly basic conditions help to reduce hydrogen bonding between starch chains by the formation of alkoxide functionalities with the starch OH groups,which consequently favours the swelling of starch grains and the diffusion of OSA molecules within the swollen starch granules.Researchers constantly explore new synthetic conditions and synthesis methods to reduce the OSA starch modification time and improve the efficiency of OSA modified starch reaction.The structure of OSA starch can be characterized by NMR,FTIR,SEC and AF4.We review the synthesis procedures and structural characterization methods of OSA starch.
