摘要
以苦瓜、槐叶为主要原料,添加适量的白砂糖、柠檬酸及其他辅料,研制出复合保健饮料。通过单因素试验、正交试验,得出最佳配方,即槐叶汁添加量6%,苦瓜汁添加量10%,白砂糖添加量7%,柠檬酸添加量0.2%。通过对护绿剂、稳定剂的研究,确定护绿剂为质量分数0.1%的抗坏血酸和含量为100 mg/kg的葡萄糖酸锌配合溶液,稳定剂添加量为0.05%黄原胶和0.1%CMC-Na的复合稳定剂。
To research the drink of compound health beverage by adding proper amount of white granulated sugar,citric acid and other accessories on the basis of the raw material of the bitter gourd and the Sophora japonica leave,which was cool and distinctive tasted,nutritional balance,and stable quality.The optimum formula was found by orthogonal experiment,which was 6%of the leaf juice,10%of the bitter gourd juice,7%white granulated sugar,and 0.2%of citric acid.Through the study on the green-preserving agent and stabilizer,it was determined that the green-preserving agent was 0.1%ascorbic acid and 100 mg/kg zinc gluconate,and the stabilizer was 0.05%xanthan gum and 0.1%CMC-Na composite stabilizer.
