摘要
采用GC-O、固相微萃取(SPME)和GC-MS方法,研究小曲清香型白酒中的异嗅味物质糠味和水嗅味化合物,同时结合感官品评,对研究结果进行验证确认。研究表明,Geosmin(GSM)为小曲清香型白酒糠味主要物质;异戊酸乙酯为小曲清香型白酒水嗅味主要物质;此外小曲清香型白酒中3-苯丙酸乙酯含量过高会导致酒体具有香闷的缺点,但含量合适时,则可以增加小曲清香型白酒的丰满度。
In the experiments,the bran-flavor compounds and water-odor compounds in Qingxiang Xiaoqu Baijiu were analyzed and determined by GC-O,SPME and GC-MS coupled with sensory evaluation.The results suggested that,geosmin was the main bran-flavor compound,and ethyl isovalerate was the main water-odor compound.In addition,the excessive content of 3-phenylpropionic in Qingxiang Xiaoqu Baijiu would lead to stuffy aroma,while it could increase the fullness of the liquor body with proper content.
