摘要
食用菌多糖是当今医药领域关注的热点,是一类重要的保健食品功能因子。研究以香菇为对象,通过水提醇沉法从中提取香菇多糖,采用正交试验优化提取工艺条件。试验结果表明最佳工艺提取条件为:乙醇浓度90%、温度75℃、提取时间3 h、pH7.0。在最佳工艺条件下,香菇多糖的提取率为27.12%。研究结果为开发香菇新附加值,提供了较为科学的理论依据。
Edible fungus polysaccharide is a very important health food factor,which is the focus of attention in the field of medicine today.Lentinan from mushrooms were extracted by ethanol subsiding method,and the extracting conditions were optimized by the orthogonal experiment.Results showed that the optimum extracted conditions were as follows:95%of the ethanol concentration,temperature 75℃,extraction time 3 h,pH 7.0.At the optimum conditions,the lentinan extraction rate was 27.12%.The research provided a basis to improve the value-added of mushrooms.
