摘要
以麦芽糖醇溶液为主要原料,抗性糊精、浓缩果汁、壳寡糖、赤藓糖醇、食盐、食用香精、食用色素等为辅料制作出一款防龋齿的硬糖。研究了浓缩果汁、麦芽糖醇溶液、抗性糊精添加量对防龋齿糖果品质的影响,以单因素试验和正交试验确定防龋齿糖果的最优配方。试验结果表明,防龋齿糖果的最佳配方为:浓缩果汁添加量2 g,麦芽糖醇添加量85 g,抗性糊精添加量25 g,壳寡糖0.3 g,赤藓糖醇3 g,食盐0.2 g,食用香精0.2 g,食用色素0.005 g。此款防龋齿硬糖制作工序简单,成本较低,有益于健康,符合当下人们对健康饮食的追求。
Maltitol solution as the main raw materials,dextrin resistance,concentrated fruit juice,chitooligosaccharide,erythritol,salt,food flavor,food coloring and other excipients as the auxiliary materials to produce a kind of anti-caries hard candy.The effects of concentrated fruit juice,maltitol solution and dextrin on the quality of anti-caries candy were studied.The results showed that the best anti-caries hard candy formula was:2 g of concentrated juice,85 g of maltitol,25 g of resistant dextrin,0.3 g of chitooligosaccharide,3 g of erythritol,0.2 g of salt,0.2 g of flavor,0.005 g of food coloring.This anti-caries hard candy is easy to make,low cost,beneficial to health,in line with the current people’s pursuit of healthy diet.
