基于CFD的食用菌热风干燥装置的研究 被引量:8

摘要 在食用菌的热风干燥中,气流均匀性是影响食用菌干燥品质的重要因素。本文研制了一种食用菌热风干燥装置,并采用计算流体力学(Computer fluent dynamic,CFD)数值分析方法建立了烘干室的仿真模型。运用该模型对烘干室进行优化设计,结果表明,在增加弧形导流板和均风板后,烘干室内的气流速度均匀性系数从0.6672增加到0.8419,气流速度均匀性增加了26.2%。对新鲜香菇进行4烘盘干燥试验,各烘盘香菇失水速率变化趋势基本保持一致,表明优化后的烘干室气流均匀性较好,为进一步优化烘干装置,提高食用菌干燥效率和品质提供了思路。 In the hot air drying of edible fungi,the uniformity of air flow is an important factor affecting the drying quality of edible fungi.In this paper,a hot air drying device for edible fungi was developed,and the simulation model of drying chamber was established by Computer fluent dynamic(CFD)numerical analysis method.The model was used to optimize the design of the drying chamber.The results show that the uniformity coefficient of airflow velocity in the drying chamber increased from 0.6672 to 0.8419 and the uniformity of airflow velocity increased by 26.2%after adding the arc-shaped guide plate and the air equalizing plate.In the test,fresh mushrooms were dried in 4 drying trays,and the change trend of dehydration rate of each drying tray was basically the same,indicating that the optimized drying chamber had better air flow uniformity,which provides an idea for further optimization of the drying device and improvement of the drying efficiency and quality.
