摘要
对雌雄预成年和雌性成年肥羔型黑山羊(自贡型)肌肉的滴水损失率进行测定,为今后肥羔型黑山羊肉质的评定提供理论参考.结果表明:预成年雌性肥羔型黑山羊背最长肌、股二头肌和臂三头肌的滴水损失率分别是1.46%、1.29%和1.33%,雄性的滴水损失率分别是2.76%、1.59%和1.95%;成年雌性羊分别是1.44%、1.30%和1.35%,肌肉的滴水损失率在不同部位之间的差异显著(P<0.01).所以得出肥羔型黑山羊肌肉的滴水损失率,背最长肌最高,臂三头肌次之,股二头肌最低,且均比较低,反映出肥羔型黑山羊优良的肉质.同时也发现不同性别之间滴水损失率的差异和在不同年龄阶段失水率可能无明显变化,需进一步实验来证明.
The drip loss rate of male and female pre-adult and female adult fat black goat(Zigong type)muscles was measured,which provided a theoretical reference for the evaluation of fleshy black goat meat quality.The results showed that the drip loss rates of the.longissimus dorsi muscles,the biceps femoris and the triceps of the pre-adult female fat black goats were 1.46%,1.29% and 1.33%,respectively,and the drip loss rates of the males were 2.76%,1.59% and 1.95%;those of adult female goats were 1.44%,1.30% and 1.35%,respectively,and the drip loss rate of muscle was significantly different between different sites(P<0.01).Therefore,the drip loss rate of the fat lamb black goat muscle is the highest,the longissimus dorsi muscle is the highest,the triceps of the arm is the second,and the biceps femoris is the lowest,and both are relatively low,reflecting the excellent meat quality of the fat black lambgoat.At the same time,it is also found that the difference in water loss rate between different genders and the water loss rate at different ages may not change significantly,and further experiments are needed.
