摘要
茶多酚作为赋予茶叶滋味色泽和保健功效的关键成分,在茶叶中含量丰富、功效显著,应用前景广阔。伴随市场需求趋于多元以及消费人群对绿色天然产品的青睐,茶多酚的提取、分离、纯化等技术已成为影响茶多酚产业下游产品开发及应用的关键。文章对茶多酚提制技术和新型制备方法梳理分析,并从产业发展及标准化现状等方面综述,以期为茶多酚提制技术创新和规范及产品规格的标准化研究提供理论参考。
Tea polyphenols are the key ingredients for sensory quality and health effects of tea.They are abundant in tea and have markedly bioactive effects and broad application prospects.With the market demand becoming more diversified and the consumers'preference for green natural products,the extraction,separation and purification technology of tea polyphenols have become the key factors affecting the downstream product development and application of the tea polyphenol industry.This paper reviewed the tea polyphenol extraction technology and new preparation methods,and summarized the status and prospect of industrial development and standardization,in order to provide theoretical reference for tea polyphenol preparation technology innovation and standardization of products.
