摘要
辣椒是日常生活中最为常用的调味品,贵阳当地饮食风味偏辣,因而消费量大。辣椒中富集的重金属会对人体造成毒害。本研究中对市售量较大的红尖椒进行检测,结果显示:汞未检出,铅的平均含量最高;铅和镉的平均含量略微超过国家标准。健康风险评估中,检出的3种重金属均符合联合国粮农组织和世界卫生组织下的食品添加剂联合专家委员会制定的可耐受摄入量。
Red pepper is the most commonly used condiment in daily life.The local diet in Guiyang is spicy,so the consumption is large.Heavy metals enriched in pepper can cause human toxicity.The results showed that mercury was not detected in pepper in Guiyang city,the average content of lead was the highest,and the average contents of lead and cadmium slightly exceeded the Chinese national stan dard.In the health risk assessment,the three heavy metals detected accorded with the tolerable intake formulated by the the Joint FAO/WHO Expert Committee on Food Additives(JECFA).
