酶法催化酸解合成富含OPO的人乳替代脂 被引量:2

摘要 在无溶剂体系下,以棕榈硬脂和油酸为原料,sn-1,3位特异性脂肪酶为催化剂,合成富含OPO的人乳替代脂。采用单因素实验对反应条件进行优化,并采用高效液相色谱与气相色谱对反应产物的甘油三酯和sn-2位脂肪酸组成进行分析。结果表明:酶法催化酸解反应的优化条件为反应时间4 h、底物摩尔比1∶10、反应温度60℃、脂肪酶NS40086用量12%;在优化条件下,所得产品的OPO含量可达72.53%,sn-2位棕榈酸含量为87.03%。 Using palm stearin and oleic acid as raw materials,human milk fat substitute rich in OPO was prepared by enzymatic acidolysis in solvent-free system with sn-1,3-position specific lipase as catalyst.The reaction conditions were optimized by single factor experiment and the compositions of triglyceride and fatty acid in sn-2 position of the substitute were analyzed by high performance liquid chromatography and gas chromatography.The results showed that the optimal conditions of enzymatic acidolysis reaction were obtained as follows:reaction time 4 h,molar ratio of substrate 1∶10,reaction temperature 60℃and dosage of lipase NS4008612%.Under these conditions,the contents of OPO and palmitic acid in sn-2 position reached 72.53%and 87.03%,respectively.
