摘要
食品安全问题是目前社会广泛关注的焦点,降低并预防微生物对食品的污染,避免其对食品的质量造成破坏已成为目前食品安全工作者工作的重点。微生物对食品安全的影响具有广泛性、不确定性、组成复杂性、易污染性等,食品安全工作者需要在实验与工作中进行严格规范的样品检验才能够对食品安全性作出评价,在采集、保存、运输、实验等过程中的无菌环境更是尤为重要。
Food safety is the focus of social attention.To reduce and prevent microbial contamination of food and avoid its damage to the quality of food has become the focus of food safety workers.The influence of microorganism on food safety is extensive,uncertain,complex and easy to pollute.Food safety workers need to carry out strict and standardized sample inspection in experiments and work to evaluate food safety.In the process of collection,preservation,transportation and experiment,the sterile environment is particularly important.
