摘要
以山西兴县红枣为试验材料,利用氨基酸自动分析仪测定红枣中氨基酸含量。结果表明,红枣中含有17种氨基酸,均可得到分离;其中,王家庄种植的红枣中脯氨酸含量最高(16.79 mg/g),天冬氨酸次之(13.15 mg/g),胱氨酸含量最低(0.11 mg/g);李家畔的红枣中天冬氨酸含量最高(11.81 mg/g),脯氨酸次之(10.24 mg/g),蛋氨酸含量最低(0.14 mg/g)。红枣中氨基酸含量存在地域性差异。
The paper determined the amino acid content in red jujube of Xingxian county, Shanxi province by using the amino acid automatic analyzer. The results showed that the red jujube contained 17 kinds of amino acids and could be separated. Among them, Wangjiazhuang had the highest content of proline in red jujube grown, with a mass ratio of 16.79 mg/g, followed by aspartic acid,a mass ratio of 13.15 mg/g, and the lowest content of cystine, with a mass ratio of 0.11 mg/g. The content of aspartic acid in Lijiapan’s red jujube was the highest, with a mass ratio of 11.81 mg/g, followed by proline, a mass ratio of 10.24 mg/g, and the lowest conent of methionine content, and a mass ratio of 0.14 mg/g. The results showed that there were regional differences in amino acid content of red jujube.
