野蚕长期蛹和家蚕蛹的蛋白质和脂肪酸含量

摘要 为蚕蛹的多元化利用提供参考,分析比较含野蚕长期蛹血缘和家蚕蛹中的蛋白质含量、蛋白质水解氨基酸组成及含量、脂肪含量、脂肪酸组成及含量。结果表明:蛋白质含量以家蚕蛹的较高,脂肪含量以含野蚕长期蛹血缘的蚕蛹较高。2类蚕蛹的氨基酸组成相同、含量相近,EAA/TAA值分别为38.22%和39.22%,较接近FAO/WHO推荐的理想氨基酸模式,7种必需氨基酸评分均高于80分。蚕蛹不饱和脂肪酸含量较高,分别占脂肪酸总量的72.20%和76.26%;单不饱和脂肪酸含量大于29.53%,以油酸为主;多不饱和脂肪酸含量大于42.67%,以亚麻酸和亚油酸为主,饱和脂肪酸含量大于23.67%,以棕榈酸为主。 The protein content,hydrolyzed amino acids composition and content of protein,fat content,and composition and content of fatty acids in long-term pupa of Bombyx mandarina and silkworm pupa are comparatively analyzed to provide a reference for diversification utilization of silkworm pupa.Result:The protein content of silkworm pupa is higher than long-term pupa of B.mandarina but the fat content of long-term pupa of B.mandarina is higher than silkworm pupa.There are no differences in composition and content of amino acids between long-term pupa of B.mandarina and silkworm pupa.The EAA/TAA value of long-term pupa of B.mandarina and silkworm pupa is 38.22%and 39.22%,which is closed to the ideal amino acid pattern recommended by FAO/WHO.The evaluation score of seven essential amino acids is higher than 80.The proportion of unsaturated fatty acid of long-term pupa of B.mandarina and silkworm pupa in total fatty acids is 72.20%and 76.26%respectively.The monounsaturated fatty acid content(mainly oleic acid)in pupa of two silkworm varieties is more than 29.53%.The polyunsaturated fatty acid content(mainly linolenic acid and linoleic acid)in pupa of two silkworm varieties is more than 42.67%.The saturated fatty acid content(mainly palmitic acid)in pupa of two silkworm varieties is more than 23.67%.
