摘要
大豆蛋白具有降低胆固醇、抗氧化、提高机体免疫等多种生物功能。为了探究不同剂量大豆蛋白对大鼠抗疲劳和运动能力的影响,本研究对SD大鼠灌胃不同剂量(200 mg, 400 mg, 800 mg)的大豆蛋白,4周后对大鼠进行力竭游泳实验,并检测大鼠血液、肝脏和骨骼肌的血糖(Glu)、乳酸(Lac)、尿素氮(BUN)、游离脂肪酸(NEFA)、肌酸激酶(CK)、天冬氨酸转氨酶(AST)、丙氨酸转氨酶(ALT)、超氧化物歧化酶(SOD)、过氧化氢酶(CAT)和丙二醛(MDA)水平。研究显示,补充大豆蛋白可按照剂量依赖方式提高大鼠的力竭游泳时间。补充大豆蛋白可降低大鼠血清的Lac和BUN水平,并提高血清NEFA水平。补充大豆蛋白可降低大鼠血清的CK、AST和ALT水平。补充大豆蛋白可提高大鼠血清SOD及肝脏和骨骼肌组织CAT水平,并降低肝脏和骨骼肌组织中的MDA水平。研究结论初步表明,大豆蛋白可有效提高大鼠的抗疲劳能力、改善能量代谢方式、提高抗氧化能力、减轻运动损伤,从而提高大鼠的运动能力。大豆蛋白补充剂有望成为提高运动员抗疲劳能力和运动能力的功能饮料,具有较高的开发价值。
Soy protein has many biological functions such as lowering cholesterol, anti-oxidation and improving immunity. In order to influence the different doses of soy protein on the anti-fatigue and exercise capacity of rats,different doses(200 mg, 400 mg, 800 mg) of soy protein were administered to SD rats, and the rats were subjected to exhaustive swimming test 4 weeks later. Blood sugar(Glu), lactic acid(Lac), urea nitrogen(BUN), free fatty acid(NEFA), creatine kinase(CK), aspartate aminotransferase(AST), alanine aminotransferase(ALT), superoxide dismutase(SOD), catalase(CAT) and malondialdehyde(MDA) levels in blood, liver and skeletal muscle of rats were measured. Studies showed that supplementation of soy protein increased the exhaustive swimming time of rats in a dose-dependent manner. Supplementation of soy protein reduced the levels of Lac and BUN in rat serum and increased serum NEFA levels. Supplementation of soy protein reduced CK, AST and ALT levels in rat serum.Supplementation of soy protein increased serum SOD, and increased CAT levels in liver and skeletal muscle tissues, but reduced MDA levels in liver and skeletal muscle tissue. Preliminary findings indicated that soy protein can effectively improve the anti-fatigue ability, improve energy metabolism, improve antioxidant capacity, and reduce sports injuries of rats, thereby improving the exercise capacity of rats. Soybean protein supplement is expected to be a functional beverage to improve the anti-fatigue ability and sports ability of athletes, and has high development value.
