摘要
果蔬采后呼吸作用旺盛,表面微生物代谢活跃,内部水分容易蒸发,品质极易在运输及储藏过程中下降。壳聚糖与壳寡糖具有广谱的抑菌效应及良好的生物相容性,相比于传统的合成保鲜剂,具有无毒、高效、低残留的优势,现已广泛应用于采后果蔬的保鲜处理。本研究着重对壳聚糖与壳寡糖的生物活性、制备方法、抑菌机制及其在果蔬保鲜应用等方面的最新成果进行综述,并提出了未来两种物质在果蔬保鲜应用上的主要发展方向。
Quality of postharvest fruits and vegetables are easy to be seriously degraded during transportation and storage due to vigorous respiration,active metabolism of surface microorganisms and evaporation of internal moisture. Chitosan and chitooligosaccharide have broad-spectrum antimicrobial effects and good biocompatibility. Compared with traditional synthetic preservatives,chitosan and chitooligosaccharides are non-toxic,efficient and low residual. Therefore they have been widely used in fresh-keeping post-harvest fruits and vegetables. This paper focused on the latest research progresses of chitosan and chitooligosaccharide in biological activity,preparation method,antimicrobial mechanism and preservation of postharvest fruits and vegetables. The main research directions of chitosan and chitooligosaccharides for preservation of postharvest fruits and vegetables in the future were put forward.
