摘要
紫苏叶含多种营养成分,以及类胡萝卜素、迷迭香酸、多酚、黄酮、紫苏醛、多糖等多种生物活性物质,具有抗氧化、防衰老、抗菌消炎、防过敏及抗肿瘤等生理功能,且紫苏根系发达、茎节密,具有很强的再生优势,因此紫苏叶有相当高的综合利用开发价值。通过综述紫苏叶的营养价值、生理功能和紫苏叶食品加工等内容,旨在为紫苏叶资源的开发利用提供参考。
Perilla leaf contains a variety of nutrients,carotenoids,rosemary acid,polyphenols,flavonoids,Perilla aldehyde,polysaccharide and other bioactive substances.It has the physiological functions of anti-oxidation,anti-aging,anti-inflammation,anti-allergy and anti-tumor,etc.In addition,the root system of Perilla leaf was developed and the stem node was dense,which has a strong regeneration advantage.Therefore,Perilla leaf has quite high comprehensive utilization and development value.This paper summarized the nutritional value,physiological function and processing of Perilla leaf.The purpose was to provide reference for the development of Perilla leaf resources.
