基于感官排序和量值估计法的烤烟僵硬度参比系建立 被引量:2

摘要 【目的和背景】叶片结构是烤烟烟叶的一个复合感官属性,僵硬度是其一种外在表现形式,为使分级人员更加深入地理解叶片结构的内涵,方便学习和交流,需建立科学合理的烤烟僵硬度参比样。【方法】设立参比样制作评价小组,通过触觉和视觉相结合的方法评价烤烟叶片僵硬度,应用感官排序法研制烤烟僵硬度参比样体系,应用量值估计法评价所建参比样的代表性与适用性。【结果】(1)根据感官评价进行排序,将僵硬度划分为7个档次,即柔软、较柔软、稍柔软、中等、稍僵硬、较僵硬、僵硬,各档次外观特征描述准确。(2)所制的7个档次参比样品的僵硬度存在显著性差异,不同档次参比样梯度划分合理,代表性和适用性强。【结论】建立的烤烟僵硬度参比样是科学可行的,能够在烟叶分级中发挥重要的作用。 [Objective and background]Leaf structure is a complex sensory attribute of flue-cured tobacco leaves,and stiffness is an external form of it.In order to make the graders understand the connotation of leaf structure more deeply and to facilitate learning and communication,it is necessary to establish a scientific and reasonable reference sample of tobacco stiffness.[Method]A reference sample evaluation team was set up to evaluate the stiffness of flue-cured tobacco through combination of tactile and visual methods.The sensory ranking method was used to develop the reference system of flue-cured tobacco stiffness.Magnitude estimation was used to evaluate the representativeness and applicability of the reference system.[Results](1)According to sensory evaluation,the stiffness was divided into 7 grades,including soft,relatively soft,slightly softer,medium,slightly stiff,relatively stiff,stiff.The appearance characteristics of each grade were described accurately.(2)There were significant differences in the stiffness of the seven grades of reference samples.The gradient division of different grades of reference samples was reasonable,representative and applicable.[Conclusion]The established reference system for flue-cured tobacco is scientifically feasible,which plays an important role in the classification of tobacco leaves.
