一种全息营养配方粉的营养及功效成分分析 被引量:1

摘要 目的通过对一种全息营养粉(含55种食材)的营养成分及功效成分进行检测分析,综合评价五神天然全息营养粉的营养价值。方法对3个批次的五神天然全息营养粉的能量、蛋白质、脂肪、维生素、矿物质元素、氨基酸组成、脂肪酸组成等营养成分及原花青素、大豆异黄酮、绿原酸、叶黄素、植物甾醇、过氧化氢酶活动度、超氧化物歧化酶活性、总抗氧化能力指数等功效成分进行了检测。结果五神天然全息营养粉的能量、蛋白质、脂肪、维生素等营养成分的含量符合均符合《中国居民膳食营养素参考摄入量(2013版)》的参考量,限制氨基酸是含硫氨基酸72.6分,氨基酸组成及脂肪酸组成均合理,可以满足人体所需;过氧化氢酶活动度、超氧化物歧化酶活性、总抗氧化能力指数分别为(17.3±7.2)mg H2O2/g、(29.4±5.1)U/g及(86.8±1.6)μmol Trolox当量/g。结论五神天然全息营养粉营养全面、抗氧化能力较强。 Objective To analyze the nutritional compositions and functional properties of a type of nutrition formula powder,a food mixture containing 55 different natural ingredients.Methods Nutritional contents and functional components of WuShen were examined using various methods,including energy,protein.fat,vitamins.minerals,amino acids.fatty acids.proanthocyanin soybean isoflavones,chlorogenic acid,xanthophyll,phytosterol.A total of three batches of WuShen were analyzed in this study.Results The concentrations of the energy provided,protein,fat,vitamin and other nutritional compositions were accord with the considerations stipulated in the Reference Intake of Dietary Mutrients for Chinese Residents(2013 Edition).The limit amino acid wa sulfur amino acid.which score was 72.6.The composition of amino acids and fatty acids of Wushen were reasonable and could mee the nutritional needs.Meanwhile,its catalase activity,superoxide dismutase activities and antioxidant capacity index were(17.3±7.2)mg HO2/g,(29.4±5.1)U/g and(86.8±1.6)pmol Trolox equivalent per gram,respectively,which indicated that Wushen had a strong antioxidant ability that could improve the body immunity.Conclusion The nutritional compositions of Wushen were comprehensive.Moreover,Wushen had a strong antioxidant ability.Therefore,people can choose Wushen for food according to their demand of the balanced diet and a nutrition healthy food.
