摘要
己酸菌为一类厌氧梭状芽孢杆菌,因筛选的材料和培养方式的不同,所分离筛选的己酸菌产酸能力有所差异。该文综述了己酸的主要代谢途径和培养条件的影响及己酸菌与不同菌种的共培养作用研究,以期为制备应用于白酒酿造的高产己酸复合菌液提供理论基础。
Caproic acid bacteria is a kind of anaerobic clostridium,because of the different methods of filter materials and training,the separation of screening ability of caproic acid bacteria produce acid differences this paper summarizs the major metabolic pathways of caproic acid and the effect of culture conditions and caproic acid bacteria culture with different strains of action research,in order to preparation used in liquor-making compound caproic acid bacteria liquid to provide theoretical basis for high yield.
