摘要
粮油食品供应链环节多,危害物种类复杂,其安全问题关系国计民生。而基于预测微生物学的理论,将其应用于粮油食品构建真菌毒素污染预测模型,对粮油食品中真菌毒素污染的控制有重要意义和应用价值。本研究对粮油食品中真菌毒素污染状况以及典型微生物预测模型进行了介绍,并分析了其在粮油食品供应链中的应用进展。对现阶段粮油食品毒素污染预测模型研究存在的问题及今后的发展进行了展望。
There are many links in the grain and oil foods supply chain,and the types of hazardous materials are complex.Their safety issues are related to the national economy and the people’s livelihood.Based on the theory of predictive microbiology,it is applied to the construction of mycotoxin pollution prediction model for grain and oil foods,which has important significance and application value for the control of mycotoxin pollution in grain and oil foods.This review introduced the contamination status of mycotoxins in grain and oil foods and the typical microbial prediction models,analyzed its application progress in the grain and oil foods supply chain,and prospected the problems existing in the current researches on the prediction models of toxin pollution in cereal and oil food and its future development.
