摘要
玉米醇溶蛋白(Zein)是玉米籽粒中主要的贮藏蛋白,来源广泛,分子中存在亲水和疏水氨基酸,结构随微环境多变。本文简述了Zein的理化特性和α-Zein(Zein主要成分)的结构模型;探讨了Zein的自组装、流变特性和相分离过程;概述了Zein在分子结构层面的物理、化学、酶法和冷等离子体等改性技术,通过改良Zein溶解度、分子结构等特性,提高复合纳米粒子的稳定性及对生物活性物质的包封率和运载效率,拓宽Zein的应用领域。
Zein is the main storage protein in maize grains which widely seen.Zein’s molecular structure varies with the microenvironment due to the hydrophilic and hydrophobic amino acids.In this paper,the physicochemical properties of zein and the structural model ofα-zein(the main component of zein)were described briefly;the self-assembly,rheological properties and phase separation process of zein were discussed;the physical,chemical,enzymatic and cold plasma modification techniques of zein at molecular structure level in recent years were summarized for the purpose of improving the solubility,molecular structure and other characteristics of zein.In addition,it helps to improve the stability of composite nanoparticles and encapsulation and transport efficiency of bioactive substances,and broaden the application area of zein.
