摘要
食品加工及相关内容在汉代获得较大发展,具体表现为食物品种丰富,加工方法多样、程序明确,部分加工场面较大,还出现了记载食品加工的《美食方》以及不同种类和用途的工具。食品加工的发展,促进了膳食及营养结构的不断完善,丰富了饮食内容,体现出汉代物质生活的不断丰富和日趋全面,对研究汉代物质文化和社会生活也具有相应的参考价值。
Food processing and related industries were greatly developed in the Han Dynasty,which can be noticed,for example,in the very many kinds of foods,the diverse food processing methods and techniques,the clearly-established procedures and sometimes impressive scenes of food processing,the bamboo slips called Mei Shi Fang that detailed in food production,the food-related tools made of different materials and for different uses.As food processing developed,the dietary pattern and the nutritious structure were improved and the dietary content was diversified,which altogether suggest that material culture of the Han Dynasty was continuously enriched and increasingly comprehensive.
