凤凰单枞茶不同香型的分类研究

摘要 [目的]建立一种简单实用的凤凰单枞茶香型分类方法。[方法]应用高效液相色谱方法研究香型不同的凤凰单枞茶的指纹图谱,采用相似度分析软件进行分析比较,获得21个识别用共有特征峰;根据相对峰面积,采用判别分析法进行分类研究,初步建立凤凰单枞茶8种香型鉴定方法。[结果]能够将参与试验的52个样品按照8个香型明显分类,正确分类率为100%。其中鸭屎香和杏仁香区分明显,证明可将鸭屎香独立于杏仁香,单独归为一个香型。[结论]该研究验证了基于化学指纹图谱的凤凰单枞茶以不同香型分级判别研究是可行的。 [Objective]A simple and practical method was established to classify Fenghuang Dancong Tea with different aromatics.[Method]The chromatographic fingerprint of Fenghuang Dancong Oolong Tea was studied by high performance liquid chromatography(HPLC).The similarity analysis software was used to analyze and compare the fingerprints.The precision and repeatability of the method were good.Twenty-one common characteristic peaks for identification were obtained.According to the relative peak area,the method of discrimination analysis was used to classify Fenghuang Dancong Tea by different aromatics,and an elevation identification method for Fenghuang Dancong Tea was preliminarily established.[Result]The results showed that fifty-two samples were classified according to eight fragrance types,and the correct classification rate was 100%.The distinction between Yashixiang and Xingrenxiang was obvious,so the Yashixiang could be clsassified as a single aroma pattern.[Conclusion]This study verified that the Fenghuang Dancong Tea based on chemical fingerprints was practicable for differentiating the classification of different aroma types.
