摘要 信息化教学能够弥补传统西餐工艺专业的缺陷,通过引进智慧导播实训系统平台,同时融合精品课程和超星课程进行教学,以提升实训教学效果。以《煎鸭胸红酒蓝莓少司》课程为案例,文章详细演绎该系统的教学过程,并分析和讨论了该系统对南宁职业技术学院旅游学院西餐工艺专业学生的影响作用和需要注意的地方。智慧导播实训系统在教学中的应用,符合当代教育发展的需要,但对教师自身信息化运用能力水平及智慧实训室设备的维护与保养也提出了更高的要求。 The information technology teaching can make up the defects of traditional western food technology specialty,through introducing the intelligent guidance and broadcasting training system platform and integrating the excellent courses and super star courses,the teaching effect of practical training can be improved.Taking the course of"fried duck breast,red wine and blueberry sauce"as an example,the teaching process of the system is explained in detail in this paper,and the influence of the system on the students majoring in Western food technology in School of tourism,Nanning college for vocational technology is analyzed and discussed.The application of intelligent guidance training system in teaching meets the needs of the development of contemporary education,but it also puts forward higher requirements for the level of teachers’own information application ability and the maintenance of the equipment in the intelligent training room.
