膳食安全视角下农民食物消费的影响因素--以四川盆地农民3种消费不足的食物为例

Influencing Factors of Farmers Underconsumption of Several Foods from The Perspective of Dietary Safety-Taking Three Kinds of Food of Farmers in Sichuan Basin As An Example

摘要 从膳食安全视角分析了当前农民几种食物消费不足的问题及影响因素,并利用351份来自四川盆地农民的膳食回顾调查问卷和似不相关回归(SUR)法进行了实证检验。结果表明:在食物可获得性方面,经济可获得性对当前农民消费不足的多种食物具有显著影响,而购买可获得性和家庭自产只对部分食物消费具有显著影响;在家庭特征因素方面,成员健康对多种食物消费均有显著负向影响,户主文化程度只对部分食物消费有显著正向影响;购买决策者偏好及对膳食安全的认知对多种食物消费均有正向影响;替代性食物在7天内并不是相互替代而是互补的关系,但显著性水平略低。 This paper analyzed the current problems and influencing factors of the under-consumption of several kinds of farmers food from the perspective of dietary safety,and conducted an empirical test based on 351 questionnaires on the dietary review of farmers in Sichuan Basin and seemingly unrelated regression(SUR).In terms of food availability,the results showed that economic availability had a significant effect on the consumption of three kinds of food including milk or milk products,fruit and chicken,purchasing availability only had a significant impact on fruit consumption,household self-production had significant effects on the consumption of fruit and chicken.In terms of family characteristics,the health of family members had a significantly negative impact on the consumption of three kinds of food,the educational level of householders had significantly positive effects on the consumption of milk or milk products and fruit.The preference of purchasing decision-makers and their perception of dietary safety had positive effects on the consumption of the three kinds of food.However,the influence of perception on fruit consumption did not pass the significance test.The relationship between alternative food was not interchangeable but complementary in 7 days,but the level of significance was not high enough.
