铁路动车冷藏快餐盒饭微生物限值探讨

Discussion on microbial limits of refrigerated fast food lunch on EMU trains

摘要 目的探讨铁路动车冷藏快餐盒饭微生物限值,为铁路餐饮加工与配送卫生规范标准的建立提供参考依据。方法 2018年6月-8月,每月一次对某市铁路管辖的冷藏快餐盒饭进行抽样,按照现行有效的标准进行菌落总数和大肠菌群计数检测。结果按照《铁路动车快餐盒饭食品安全控制要求》评价,72 h监测点,菌落总数合格率为76. 7%,大肠菌群计数合格率为86. 7%。G套餐菌落总数从初始到最后合格率均为0. 0%。按照《冷藏快餐盒饭保质期限测试方案》评价,微生物限值范围扩大,96 h监测点,菌落总数合格率仍可以达到91. 7%,大肠菌群计数合格率达91. 7%。结论建议铁路动车冷藏快餐盒饭微生物限值应使用《铁路动车快餐盒饭食品安全控制要求》中的规定,以更严格的微生物限值保障广大旅客的食品安全。 Objective To discuss the microbial limits of refrigerated fast food lunch on electric multiple unit( EMU) trains,so as to provide reference for the establishment of hygiene standards for railway catering processing and distribution. Methods The refrigerated fast food lunch under the jurisdiction of the Beijing Railway was sampled once a month during June 2018-August 2018. Total colony count and coliform count were tested according to current valid standards. Results Evaluation was conducted according to the Safety Control Requirements for EMU Fast Food at 72-hour monitoring point,the pass rate of the total number of colonies was 76. 7%,and the pass rate of the coliform count was 86. 7%. The pass rate of the total number of colonies in preserved vegetable and pork was 0. 0% before and after monitoring. According to the Testing Scheme for Shelf Life of Refrigerated Fast Food Box Lunch,the scope of the microbial limit was expanded. At a 96-hour monitoring point,the pass rate of the total number of colonies could still reach 91. 7%,and the pass rate of the coliform count reached 91. 7%. Conclusion It is suggested that the detection of microbial limit values for refrigerated fast-food box lunches on trains still follow the regulations in the Requirements for Food Safety Control of Fast-food Box Lunches on Trains,so as to ensure food safety for passengers with stricter microbial limits.
