黄酮类化合物在肉类生产中的应用研究进展 被引量:9

摘要 黄酮类化合物是一种多酚类化合物,具有多种药理作用,可改善家畜的生长性能和产品质量。但关于它们对畜牧业生产影响的研究有限。黄酮类化合物可能有助于改善应激条件带来的负面影响,但在正常情况下对生长性能的影响一般有限。此外,黄酮类化合物有利于改善肉类脂肪酸组成,提高肉类氧化稳定性。本文对黄酮类化合物的实际应用研究进行了综述,并提出今后的研究方向。 Flavonoids is a kind of polyphenols,which has many pharmacological effects and can improve the growth performance and product quality of livestock. But research on their impact on livestock production is limited. Flavonoids may help to ameliorate the negative effects of stress conditions,whereas under normal conditions,the effects on growth performance are generally limited. In addition,flavonoids can improve the fatty acid composition of meat and improve the oxidation stability of meat. Nevertheless,more studies are needed on the effects of flavonoids on growth performance and dose response in pigs and rabbits. Therefore,this paper reviews the practical application of flavonoids and puts forward the future research direction.
