摘要 本研究旨在评估日粮中添加富含单宁的木本植物对山羊肌肉氧化稳定性、胴体性状和肉质的影响。试验选择两种富含单宁的植物(沙参叶和刺槐叶),进行3个日粮处理的饲养试验,其中对照组饲喂以苜蓿草为基础的日粮,处理组分别添加12.5%的沙参和刺槐,各组饲料均为等蛋白和等能量。结果 :各处理对山羊采食量、日增重、胴体产量和肉质性状均无显著影响(P> 0.05)。各处理对肌肉脂肪酸含量具有显著影响,处理组较对照组C18:2n-6c脂肪酸的浓度显著增加36%(P <0.05)。在室温、冷藏和冷冻条件下,对照组和木本植物组的肌肉氧化状态有所不同。结论 :在山羊日粮中添加沙参和刺槐叶可以提高肉的氧化稳定性,但这些植物的浓缩单宁对瘤胃生物氢化脂肪酸的调控需进一步研究。 The purpose of this study was to evaluate the effects of dietary addition of tannin-rich woody plants on muscle oxidation stability,carcass traits and meat quality of goats. Two tannin-rich plants(radix adenophorae leaves and robinia pseudoacacia leaves)were selected for three feeding experiments. The control group was fed a alfalfa-based diet,while the treatment group was fed with 12.5% radix adenophorae leaves and robinia pseudoacacia leaves respectively. The feeds of each group were isoprotein and isoenergy. Results :there were no significant effects on feed intake,daily gain,carcass yield and meat quality. Each treatment had a significant effect on the content of muscle fatty acids,and the concentration of C18 :2 n-6 c fatty acids in the treatment groups were significantly increased by 36% compared with the control group(P < 0.05). At room temperature,refrigeration and freezing conditions,the muscle oxidation status of the control group and the woody plant groups were different. Conclusion :adding radix adenophorae and robinia pseudoacacia leaves into goat diet can improve the oxidation stability of meat,but the regulation of concentrated tannin of these plants on biohydrogenated of fatty acids in rumen needs further study.
