摘要
调味品在人们的日常饮食中十分常见,也极其重要,多元化的饮食习惯形成了多样的调味品风格。在嗜辛辣口味人群中,山葵和芥末系列调味品因其独特的辛辣口感和较高的营养价值而备受青睐。然而,山葵和芥末原料的特殊性也使得其系列调味品的设计和加工工序较为复杂,本文旨在介绍对山葵和芥末系列调味品设计和加工工艺的一些研究成果。
Condiments are common and extremely important in our daily diet.Diverse eating habits have formed a variety of condiment styles.Among the spicy taste crowd,wasabi and mustard series condiments are favored for their unique spicy taste and high nutritional value.However,the particularity of the wasabi and mustard raw materials also makes the design and processing of its series of condiments more complicated.This article aims to introduce some research results on the design and processing technology of wasabi and mustard condiments.
