摘要
为了研究枣果实保护酶活性的变化规律,以陕北狗头枣果实为材料,测定了狗头枣不同时期超氧化物歧化酶(SOD)、抗坏血酸过氧化物酶(APX)和过氧化氢酶(CAT)3种保护酶的活性。结果表明,SOD活性先大幅度下降,之后缓慢上升,全红期后又下降;CAT活性在全红期前呈上升趋势,之后缓慢下降;APX活性在成熟期前总体呈上升趋势,之后小幅下降;SOD活性变化最大,是成熟衰老过程的关键酶之一,其参与清除活性氧的第1步反应,清除枣果实内的H2O2,APX和CAT在SOD之后启动,参与清除活性氧的第2步反应,这3种保护酶协同清除氧自由基,促进枣果实的生长发育。适当提高枣成熟期枣果实的这3种保护酶活性,可以延长鲜枣的贮藏时间。
To study on the activity change rules of protective enzymes in the jujube fruit growth,the activities of three protective enzymes,superoxide dismutase(SOD),ascorbic acid peroxidase(APX)and hydrogen peroxide enzyme(CAT)at different times of Goutou jujube fruit were measured in this study.The results showed that SOD activity decreased sharply first,then slowly increased,and then decreased during the red period.CAT activity showed an upward trend before the full red period,and then slowly decreased.APX activity generally increased before maturity and then decreased slightly.It could be infered that SOD was one of the key enzymes in the mature aging process,and was the first enzyme involved in the removal of reactive oxygen and H2O2 in the fruit.Where as the activities of APX and CAT were launched induced by the enzymatic reaction of SOD,they were the participants in the second step of enzymatic reaction to scavenge reactive oxygen species or free radicals.So,it showed that these three protective enzymes worked together to remove oxygen free radicals,promote the growth and development of the fruit.The storage time of fresh jujube could be prolonged by increasing the activities of these three protective enzymes.
